Jamaican Festival is a popular street food that is the perfect side dish for many dishes. It is a traditionally served with , Ackee & Saltfish, Fried Fish, Calaloo, among many other things. This can be enjoyed by itself.
In a large bowl sift flour, baking powder, and cornmeal. Use a spoon to mix ingredients evenly.
Add sugar, salt and, margarine.
Use your hand to mix the ingredients. The dough will become flaky.
Gradually add water, just enough to bind the mixture into a manageable dough. The Dough should be of a sticky consistency.
Rub the excess dough from the sides and place dough in the middle of the bowl and allow to rest for 15 minutes.
Heat oil in Frying pan or dutch pot.
Pick pieces of dough and shape into fingers and add to the hot oil.
Cook until golden brown and floating atop the oil. Remove from pan onto a plate with a paper towel to drain. Serve hot.
If the dough becomes too sticky sprinkle flour and knead until reached a sticky consistency.
